JS-18 Demi Chef de Partie
Your main responsibilities:
- Full awareness of all menu items, their recipes, methods of production and presentation standards.
- To prepare, cook and present high quality dishes within the speciality section at all times.
- To ensure highest levels of guest satisfaction through the production and preparation of food.
- Able to estimate the daily production needs and checking the quality of raw and cooked food products to ensure that standards are met.
- To have a thorough knowledge of Mediterranean food products, their origin, and ensure his/her subordinates and team members confidently handle these products.
- To ensure the standard recipes are being followed at all times.
- To actively employ cost control tools on the day-to-day operations.
- Knowledge of all standard procedures and policies pertaining to food preparation, receiving, storage and sanitation, knowledge and employment of H&S and HACCP regulations.
- To follow good preservation standards for the proper handling of all food products at the right temperature.
- To manage and train any Commis Chefs.
- To monitor portion and waste control.
- To thoroughly understand, adhere to and train on all standards in food quality and safety, presentation, food intolerances, food hygiene practices.
- To follow the guidelines of health, safety, hygiene and the HACCP system.
- To ensure the daily supervision of all subordinates ensuring that their actions, duties and opening and closing duties are carried out in accordance with the pre-set procedures.
- Knowledge and ability to run a section.
- Ability to work without close supervision.

Requirements
- Holder of EU passport, citizen of the EU
- Graduate of a tertiary school of culinary education
- Three years of experience in similar Mediterranean work environment, previous pre-opening experience considered an advantage
- Must speak and write English fluently, Greek is considered an advantage
- Knowledge, experience of kitchen equipment
